The olive tree is a blessed tree which thrives in the stony and infertile regions of the Mediterranean. It produces its fruit under unfavourable conditions such as drought, strong winds and high temperatures, while its long life-span and productivity contributed to the history of the Mediterranean people. The olive tree gave light, nourished, healed, wreathed, embellished and was a symbol of high ideals; it also inspired the civilization of the East Mediterranean, which flourished for many years.

A symbol of knowledge, wisdom, abundance, peace, health, power and beauty it was worshipped for thousands of years. It constitutes the live part of the great cultural inheritance including myths, traditions and religious ceremonies, which are tied for ever with the bloom, the harvest and the production of olive oil.

The olive tree left us an extraordinary complex inheritance of values, wealth, affluence and culture, which only lately were we in the position to evaluate and protect.

The Tree

The scientific name of the evergreen, long-living olive tree is Olea Europea Sativa. The cultivated olive tree originates from the eastern Mediterranean basin. It can adapt to long-lasting droughts and hot summers as well as to temperatures of as low as 0 degrees C. When fully grown, the olive tree is of medium height. Sometimes they can reach a height up to 10 m. However, there also exist dwarf olive trees for decorative purposes.

In the Mediterranean area the olive trees blossom towards the end of spring (April/May) while the harvest starts from end of November and terminates in February in the more southern areas.
